Smoke the salmon for 3 to 4 minutes to get it to reach its internal temperature. Remove the smoked salmon from the grill and place it on a paper towel-lined plate to cool. In a medium saucepan, heat the olive oil over medium-high heat. Because the fish is being cooked indirectly it will take longer than if it's grilled directly. Plan on about 50% more cooking time versus regular grilling when cooking on a plank.
